宋(sòng )苏(sū )轼(shì )贬(biǎn )黄(huáng )州(zhōu )时(shí ),曾(céng )戏(xì )作(zuò )《猪(zhū )肉(ròu )颂(sòng )》诗(shī ):“净(jìng )洗(xǐ )铛(chēng ),少(shǎo )着(zhe )水(shuǐ ),柴(chái )头(tóu )罨(yǎn )烟(yān )焰(yàn )不(bú )起(qǐ ),待(dài )他(tā )自(zì )熟(shú )莫(mò )催(cuī )他(tā ),火(huǒ )候(hòu )足(zú )时(shí )他(tā )自(zì )美(měi )。
黄(huáng )州(zhōu )好(hǎo )猪(zhū )肉(ròu ),价(jià )钱(qián )如(rú )泥(ní )土(tǔ )。贵(guì )者(zhě )不(bú )肯(kěn )喫(kài ),贫(pín )者(zhě )不(bú )解(jiě )煮(zhǔ )。早(zǎo )晨(chén )起(qǐ )来(lái )打(dǎ )两(liǎng )碗(wǎn ),饱(bǎo )得(dé )自(zì )家(jiā )君(jūn )莫(mò )管(guǎn )。”后(hòu )肴(yáo )馔(zhuàn )中(zhōng )有(yǒu )所(suǒ )谓(wèi )“东(dōng )坡(pō )肉(ròu )”,本(běn )此(cǐ )。其(qí )烹(pēng )调(diào )方(fāng )法(fǎ ),后(hòu )世(shì )说(shuō )法(fǎ )不(bú )一(yī )。
明(míng )沉(chén )德(dé )符(fú )《野(yě )获(huò )编(biān )·玩(wán )具(jù )·物(wù )带(dài )人(rén )号(hào )》:“肉(ròu )之(zhī )大(dà )胾(zì )不(bú )割(gē )者(zhě ),名(míng )东(dōng )坡(pō )肉(ròu )。”胾(zì ),大(dà )块(kuài )肉(ròu )。
清(qīng )翟(zhái )灏(hào )《通(tōng )俗(sú )编(biān )·东(dōng )坡(pō )肉(ròu )》:“今(jīn )俗(sú )谓(wèi )烂(làn )煮(zhǔ )肉(ròu )曰(yuē )东(dōng )坡(pō )肉(ròu )。”
